Fried Calamari with Jaew Aioli

Ingredients

Fried Calamari

  • 1/2 tsp Blackening Seasoning
  • 1 # Squid cleaned and scored
  • 1 cup tempura flour
  • 1/2 cup sparking water
  • as needed Thai Basil
  • as needed Lemon wedges

Jaew Aioli

  • 115 grams Fish Sauce
  • 115 grams Lime Juice
  • 76 grams sugar white granulated
  • 10 grams garlic minced fine
  • 4 grams egg yolk
  • 1 quart Grapeseed oil

Instructions

Calamari

  • Heat up Fryer to 350F
  • In a shallow bowl mix the flour and sparkling water until thin batter is made.
  • Dip the calamari, thai basil and scallion in the batter and fry making sure to remove excess batter before adding the food to hot oil.
  • Fry everything adding one ingredient at a time and making sure to to over crowd the pot. Fry for about 4-6 minutes and the remove using a slotted spoon and season lightly with salt.

Jaew Aioli

  • Combine fish sauce, sugar, Lime Juice, garlic and chillies into a blender, Blend until fine. Set Aside.
