  • 408 grams Semolina Flour
  • 1 teaspoon Salt kosher
  • 1 teaspoon Baking Soda Baking in an oven at 200 F for 1 hour
  • 2 each Eggs whisked together


  • in a bowl add the flour, salt, baking soda.
  • Form a well in the center of the flour and add the liquids
  • whisk the liquids while slowly pulling a flower into the well. Continue until forms of though. Knead well for 10 minutes.
  • Allow dough to rest for 20 minutes. It should be a pretty dense dough.
  • Cut dough ball into 4 equal pieces and roll them out into sheets. Use a spaghetti cutter if you have, or use a knife and cut the pasta into long ribbons.
  • Dust in excess flour and set aside until ready to cook.
  • To Cook the noodles, bring a large pot of water to a boil. Add the noodles and mix instantly. Cook for 1 minute and 30 seconds. Remove noodles from the water and add to hot broth of choice or chill and serve as a noodle salad or stir fry it with your favorite stir fried veggies and sauce.
