
Samosas
Ingredients
- 180 grams Garlic cloves minced
- 2045 grams Onions minced
- 25 grams Cilantro Stems minced
- 2270 grams Ground Chicken you can use pork and shrimp substitute
- 12.5 each Thai Chili minced
- 3975 grams Potatoes peeled, cooked, sm. diced
- 60 grams fish sauce
- 270 grams Sugar white granulated
- 95 grams Salt
- 320 grams Shallots
- 135 grams Madras Curry Powder
- 10 grams Chappati Indian Chili Powder
- 10 grams Chili Powder
- 10 grams Coriander Dried Ground
- 5 grams Cumin
- 2.8 grams Turmeric Powder
- 4.25 grams Chappati Chapli Kebab Powder
Instructions
- Heat oil in a large wok and stir in the garlic and onion to cook. Make sure to not burn them.
- Add the cilantro and the protein and cook until cooked through. Add the rest of the ingredients and mix well. chill the fill before you stuff the Samosas
- To stuff the samosas I like to double wrap them so they don't explode and have a crispy crust.
