  • 180 grams Garlic cloves minced
  • 2045 grams Onions minced
  • 25 grams Cilantro Stems minced
  • 2270 grams Ground Chicken you can use pork and shrimp substitute
  • 12.5 each Thai Chili minced
  • 3975 grams Potatoes peeled, cooked, sm. diced
  • 60 grams fish sauce
  • 270 grams Sugar white granulated
  • 95 grams Salt
  • 320 grams Shallots
  • 135 grams Madras Curry Powder
  • 10 grams Chappati Indian Chili Powder
  • 10 grams Chili Powder
  • 10 grams Coriander Dried Ground
  • 5 grams Cumin
  • 2.8 grams Turmeric Powder
  • 4.25 grams Chappati Chapli Kebab Powder


  • Heat oil in a large wok and stir in the garlic and onion to cook. Make sure to not burn them.
  • Add the cilantro and the protein and cook until cooked through. Add the rest of the ingredients and mix well. chill the fill before you stuff the Samosas
  • To stuff the samosas I like to double wrap them so they don't explode and have a crispy crust.
